Fennel. Have you heard of it? Cause I know prior to this summer I hadn’t. It was when I snagged a CSA weekly membership from Sandbox Organics at the Logan Square Farmers Market that I got the opportunity to get hands on with this gorgeous and aromatic plant. It wasn’t my first pick to experiment with in the kitchen the other night, let me keep it real. But the decision was a game-changer. I created a fennel pesto recipe for healthy skin to glaze over your grilled veggies and seafood skewers; keeping your skin glowing all summer long!

Benefits of My Fennel Pesto Recipe
Fennel is a potent antioxidant that helps reduce free radical damage to the skin. In other words, eat fennel if you want your skin to stay healthy and look vibrant as you get older, girlfriend! Also, this pesto is walnut-based, unlike most store-bought pestos which are cashew-based. Cashews cause me to break out, where my walnut-based recipe is great for my skin!
I’m sold. I love to know I’m gonna feel great about what I’m eating and look great as a result. Because let me tell you; JLo ain’t the only woman who can age like a goddess, honey. Knowledge is power and you can GLOW up this summer, too- all you have to do is eat your way there!
What You Will Need To Make The Perfect Summer Fennel Pesto Recipe
Fennel Pesto Recipe
Fennel Pesto Ingredients
- 1 c. toasted walnuts
- 2-3 c. loosely packed fennel fronds
- 1 lemon juiced
- 2 clove garlic
- 1/2 tsp. sea salt
- 1/2 c. olive oil (plus 1/4 c. extra)
Fennel Pesto Directions
- Roast the walnuts on your stovetop for 3-5 minutes.
- Let the walnuts cool for 5 minutes
- Combine the walnuts, fennel, lemon juice, garlic cloves, salt and 1/2 cup olive oil in your Hamilton Beach Food Processor
- Halfway through mixing, add in the extra 1/4 c. olive oil for desired consistency.
- Refrigerate for about 15-20 minutes; the sauce may still be warm from the toasted walnuts!
- Enjoy with a side of fish and broccoli- eat like a queen!
